In the past decade, new trends in the food industry show an enhanced concern for the quality and safety of food products as well as an increasing preference for natural products and stricter regulations related to the residual level of solvents. The growing use of supercritical fluid technology as a primary alternative to traditional solvents can be largely attributed to these trends. "Supercritical Fluid Extraction of Nutraceuticals and Bioactive Compounds" presents the current state of the art in extracting and fractionating bioactive ingredients by supercritical fluids. Focusing on implemented industrial processes, this book reviews major active components in the target material including chemical, physical, nutritional, and pharmaceutical properties.
